This video is from a Lisa Fernandez coaches clinic, and is on how to hit the change up.

I hope it helps

This is a great question!!

My daughter has this problem of either lunging at the ball or getting froze by that pitch.  What can we do to help this?

Hitting a change up i was just told to wait, wait, wait, and wait some more.

What are some drills that are good for learning timing on change ups?

Here's what I teach my girls.  Don't start your swing until you've taken your step.  Take your step when the ball is being released.  If you see yellow when it's released it's a fastball.  If you don't see yellow, it's a change-up (the pitcher's hand is upside down).  So don't judge the speed of the ball, judge the pitcher's hand to determine the speed of the ball.  If you see fastball take a normal step.  If you see change-up take a higher step and thereby starting your swing later.  You see this all the time in Major League baseball.

Ideally your stride will be the same no matter what the pitch.  Your stride should be light so you don't create a huge weight shift.  Then comes the trust in your hands.  Practice is the best way to trust your hands.  Have someone toss to you with throwing change ups into the mix; this will give you the best feel.

Of course we all get fooled once in a while.  And when you do, don't give up and swing in slow motion like most kids do.  If you keep your hands back ready to launch, you can still make solid contact with the ball even if you are off balance.  As long as your bat has more velocity than the ball, you can still get a pretty good poke.
